For the serious whiskey enthusiast, few opportunities come along that genuinely mark a place in history. The Croithlí Cask 2 is one of them.
This is the first 4-year-old Irish whiskey to be released from Donegal in 180 years — and the very first single malt to emerge fully formed from the newly operational Croithlí Distillery. Distilled on 20 November 2020 using our direct-fired Charentais stills and matured on-site in a single ex-bourbon cask, this bottling is a milestone: for the distillery, for Donegal, and for Irish whiskey itself.
Crafted with soul, sealed with provenance — Cask 2 is a collector’s debut that won’t come again.
Crafted by our Master Distiller Julio Diana and his team, this inaugural release is proof of our commitment to reviving authentic Donegal whiskey with traditional techniques and an uncompromising approach to flavour.
DISTILLATION: THE CROITHLÍ WAY
DIRECT FIRED CHARENTAIS STILLS
Our Charentais copper pot stills were sourced from Cognac and retrofitted at Croithlí to allow for open flame direct fire distillation — the only process of its kind in Ireland.
The distinctive heat source causes the Maillard effect (a browning reaction similar to searing meat), producing a richer, more complex flavour profile. It’s this signature process that gives Croithlí whiskeys their layered depth and unmistakable character.
MATURATION & CLIMATE
EX-BOURBON CASK, HEAVEN HILL, KENTUCKY
This whiskey was matured in a single cask sourced from Heaven Hill, renowned bourbon producers in Kentucky, USA.
Its full maturation took place on site at the Croithlí Distillery in Donegal, where the Atlantic air and Derryveagh Mountains create a temperate climate ideal for whiskey development. The result is a spirit of great balance and character.
